Where the claim comes from
The negative-calorie list has been circulating since at least the 1930s and it barely changes: celery, cucumber, lettuce, grapefruit, watermelon, apples. All are watery, fibrous and very low in energy. The leap — from “low calorie” to “net negative” — came from a real physiological effect being stretched several times past its size.
The effect is genuine. The stretch is not.
What digestion actually costs
Your body spends energy breaking food down, absorbing it and storing it. This is the thermic effect of food, and it is measurable:

Notice the ceiling. Even protein — by far the most expensive macronutrient to process — tops out around 30%. To go net negative you would need a food costing more than 100% of its own energy, and nothing on the vegetable aisle comes close.
There is a second reason the sums cannot work: these percentages are already folded into the 4-4-9 factors used on labels. Running the numbers on celery
A medium stalk of celery is roughly 40 g and about 14 calories — mostly water, with fibre and a little sugar. Suppose digesting it costs a generous 10%. That is 1.4 calories reclaimed, leaving about 12.6 calories net positive.
Chewing does not rescue the theory either. Chewing is skeletal muscle work, and it is remarkably cheap; the energy involved in eating a stalk of celery is a rounding error against the stalk itself. You cannot eat your way into a deficit, however slowly you chew.
The ice water case — the one with real physics
Here is the version of the myth that is nearly true. Drinking cold water genuinely does cost energy, because your body warms it to core temperature. Warming 500 ml of near-freezing water to 37°C takes on the order of 17–18 calories.
Plain water contains zero calories, so this is real net expenditure — the only honest “negative calorie” item in the whole discussion. It is also about 17 calories, which is to say roughly one bite of toast. Worth knowing, not worth building a strategy on.
The useful version of the idea
Strip out the bad arithmetic and something practical survives. Foods that are mostly water and fibre let you eat a large, satisfying volume for very few calories. Celery, cucumber, leafy greens, courgette, cabbage, tomatoes, berries — these do not burn calories, but they occupy space and time in a way that 200 calories of biscuits does not.
That is the real mechanism, and it needs no myth to justify it. It also runs in reverse, which is the more common problem: the foods that quietly dominate a day’s total are the dense ones, as our guide to calorie-dense foods lays out.
The trap is what goes on top. Celery is 14 calories; celery with two tablespoons of peanut butter is closer to 200. The stalk was never the variable.
Frequently asked questions
Are there any true zero-calorie or negative-calorie foods?
No food has been shown to require more energy to digest than it provides. Digestion costs roughly 5 to 10 percent of the energy in carbohydrate and fat and 20 to 30 percent for protein, which is nowhere near the 100 percent that a negative-calorie food would require.
Does celery burn more calories than it contains?
No. A medium celery stalk contains about 14 calories, and digesting it reclaims only about 1 to 2 of those. Celery is very low in calories, but the net effect is still positive.
Does drinking ice water burn calories?
Yes, though only slightly. Warming about 500 millilitres of near-freezing water to body temperature costs roughly 17 to 18 calories. Since water contains no calories, this is genuine net expenditure, but it is far too small to drive weight loss.
Which foods are closest to free?
Foods that are mostly water and fibre give the most volume for the fewest calories, including celery, cucumber, lettuce, cabbage, courgette, tomatoes and most leafy greens. They are not calorie-free, but they are filling enough that portion size rarely matters much.
